Easy Squash Casserole

Hey Everyone!

I grew a garden full of SQUASH! I surprised myself really. I have never grown anything and well a friend of mine encouraged me to give gardening a try. She said it was so easy that even a child could grow vegetables so I said, “okay, I’ll dig a hole and put some seeds in.”

What I actually did was ask my 12 year old to dig up some dirt, and we’d all just put seeds everywhere. Well, guess what? The seeds grew plants and now we have SQUASH; nice size beautiful squash.


Believe it or not, I’m not a fan of squash LOL but I grew it so I feel I have to eat it. I decided to try my hands at squash casserole. I made it very easy and it was very tasty. Squash isn’t so bad after-all. 🙂

Super easy squash casserole
  • 1 large squash or 2-3 small squash sliced thin
  • 1 sweet onion; chopped
  • ¼ cup vegetable oil or olive oil
  • ½ cup Parmesan cheese
  • 1 cup cheddar cheese
  • ½ cup Italian bread crumbs
  • Salt & Pepper to taste
  1. Heat oil in skillet and add onions and squash; saute until onions are translucent and squash is tender
  2. Add salt and pepper to taste
  3. Mix in skillet or bowl with Parmesan and Cheddar cheese
  4. Add to casserole dish (can sprinkle with additional cheese; optional)
  5. Top with bread crumbs
  6. Bake 20 minutes at 350 degrees
